You don’t need to give up your favorite tastes and flavors just because you need to go gluten-free. Try making these 10 creative, gluten-free desserts at home. They are quick and easy to make and they are marvelously delicious!
1. Chocolate cups
Heat a saucepan over a medium flame and add ⅔ cup granulated sugar, 2 tablespoons of cornstarch, a pinch of salt, a cup of whole milk and 4 well-beaten egg yolks. Stir constantly for 15 minutes. When you turn off the flame, add in ½ teaspoon of vanilla extract, 6 ounces of bittersweet chocolate and a teaspoon of cocoa powder. Mix well and serve chilled in glasses.
2. Rice pudding
You’ll need two cups of instant rice, ½ teaspoon of ground cinnamon and vanilla ice cream. Once you have the instant rice ready, all you need to do is to add ice cream and cinnamon, and stir.
3. Chocolate cake (without flour)
Baking a cake without flour requires a creative approach. You need to find a substitute everywhere that you would normally use flour. To dust the cake tin with, for instance, you use cocoa powder. For the cake itself, you make the batter with butter, heavy cream, chocolate, eggs, granulated sugar and cocoa. This recipe makes for an amazingly soft cake.
4. Poached Pear
Mix half a bottle of red wine with juice from a lemon and an orange, ¾ cup of sugar, vanilla extract, a cinnamon stick and cloves. Bring it to a boil and add in 4 ripe whole pears. Let the mix simmer. You can serve the pears after letting them soak in the mixture for 20 minutes.
5. Maple apple
Core a large apple and place on a baking dish. Drench it in maple syrup and stuff its core with raisins and walnuts. Place a spoon of butter on top and bake for 45 minutes. Serve with ice cream when it’s done.
6. Rice coconut custard
Open a can of unsweetened coconut milk, mix in sugar and boil in a saucepan. Drop in a cup of rice and simmer it until the rice is properly cooked. Mix 3 cups of half-and-half, 5 eggs, vanilla and ¼ cup sugar in a bowl and heat over a low flame. Stir in the rice mixture and transfer to a baking dish. Your custard will be ready once it spends an hour in the oven.
7. Espresso ice cream
Boil a cup of water and mix in instant espresso. Scoop vanilla ice cream into bowls and sprinkle in grated dark chocolate. Drizzle the espresso over it and serve right away.
8. Peanut butter cookies
Cookies are usually out of bounds to those on a gluten-free diet. Old-fashioned peanut butter cookies, though, use no flour. You just need to mix 1 cup creamy peanut butter with 1 well-beaten egg, 1 cup sugar, baking soda and vanilla, and bake at 350°F for 10 minutes.
9. Fruit parfait
You need chopped-up peaches, raspberries and vanilla ice cream for gluten-free fruit parfait. Mix the fruits up and toss them in lemon juice and sugar. Scoop vanilla ice cream into glass bowls, top it with the fruit and serve.
10. Mango gratin
Chop up a peeled mango into bite-sized pieces. Place the pieces in individual glass bowls and add in a touch of lime zest. Add yogurt, brown sugar, butter and lemon juice. Place in an oven and broil for 3 minutes until the topping melts to form a delicious, gooey mixture.
