1. Watermelon sorbet
Cut up watermelon into chunks and toss together with a cup of sugar and a pinch of salt. Let the sweetened watermelon stand for a half hour. Then, throw it in a blender together with tomato juice and blend until smooth. Add a little lemon juice, stir thoroughly and freeze. Ball up the frozen mixture with an ice cream scoop and serve in a glass bowl.
2. Watermelon mint salad
Cube 2 pounds of watermelon and place on a plate. Sprinkle shredded mint leaves, finely chopped onion, salt and black pepper on the pieces. This salad goes well with grilled kebabs.
3. Watermelon iced tea
Boil 8 cups of water and pour in a pitcher. Steep 8 teabags in the water. Once the teabags are spent, discard them and let the hot tea in the pitcher cool. You’ll need chilled seedless watermelon, limeade concentrate, fresh lime juice, ice and vodka. Throw these ingredients in a blender and purée until you have a smooth mixture. You may need to add water. Pour into tall glasses, mix in a touch of vodka and serve. Watermelon doesn’t keep well at all once it’s turned into pulp. 7. Watermelon jelly
Purée enough watermelon to make 3 cups of strained, pulp-free watermelon juice. Sprinkle three packets of unflavored gelatin (a packet usually contains ¼ oz. ) in a glass. As you let the gelatin get to work, pour the other two cups of watermelon juice in a saucepan, mix in ½ cup of sugar and warm over low heat until the sugar dissolves. Add in the gelatin mixture and ¼ cup of lemon juice before you turn off the heat. Pour into a dish and leave in the refrigerator overnight. By morning, you should have a sparkling, wobbly and fun jelly to serve.
8. Watermelon agua frescas
Agua frescas are a simple fruit drink – they have fruit, water and lime. Sometimes, you add a little vodka or other alcoholic beverage for some kick. The secret to great watermelon agua frescas is to use the ripest watermelon that you can find. Once you have it, you simply need to run it in the blender with ice, add agave nectar and 2 teaspoons of lime juice.
9. Frozen watermelon margarita
Purée watermelon with a hand blender and add in lime, tequila, sugar, salt and lime zest. Place the mixture in a pan and set in the freezer. When it’s frozen solid a couple of hours later, place scoops of it in a glass and serve as a refreshing slush.
10. Watermelon mojitos
Get a tall glass, fill it with lime juice and mix in 2 teaspoons of sugar. Throw in ice, two chunks of watermelon, a few mint leaves and white rum. Fill the rest of the glass with ginger ale.
