A brunch can be a wonderful way to celebrate the weekend, a family get-together or just about any other occasion. The food is often a mix between sweet and savory, allowing each person to choose what they enjoy most. Having options is key, but no one really wants to spend more time than is strictly necessary preparing brunch. These recipes will let you get food on the table in minimal time, with very little work.
1. Tangy Fruit Salad
This is so simple, you hardly need a recipe.
- 1 c. strawberries, sliced
- 1 banana, chopped
- 1 orange, chopped
- 1 tbsp. lime juice
- 1 tbsp. honey
Mix the lime juice and honey until dissolved. Toss the fruit together and drizzle with the honey mixture and mix well. Serve chilled.
2. Bacon Scrambled Eggs
Nothing says breakfast like bacon and eggs.
- 10 slices bacon, chopped
- 6 eggs
- 3 tbsp. cream
- Salt and pepper
Cook the bacon over medium high heat while you beat the eggs and cream together. Add to the pan and stir gently while cooking until the eggs are solid. Season to taste before serving.
3. Cajun Home Fries
This easy dish is so tasty, your guests will beg for more.
- 2 lb. potatoes, boiled and chopped
- 2 tbsp. Cajun seasoning
- 2 tbsp. oil
- Salt to taste
Heat the oil in a frying pan over medium high heat. Add the potatoes and cook for 2 minutes or until golden brown on the underside.
Stir the fries frequently and sprinkle with salt and Cajun seasoning. Continue to fry until all sides are browned. Serve hot.
4. Tortilla Omelet
This recipe is more filling than the average omelet.
- 2 eggs
- 1 whole wheat tortilla, large
- Fillings of your choice
Beat the eggs and pour into a hot frying pan. Cook for a couple of minutes until nearly set. Lay the tortilla over the egg and flip. Cook until the egg is set through. Add your fillings, fold the omelet over and serve.

5. Baked Omelets
These easy omelets are no fail and any extras can be frozen for later.
- 12 eggs
- 12 strips bacon, cooked and crumbled
- 1 onion, minced
- ½ c. parsley, minced
- 3 tomatoes, minced
- 1 c. cheese, grated
Preheat the oven to 350°. Grease a muffin tin.
Mix the eggs, onion, parsley and tomato and divide between the muffin cups. Top each omelet with cheese and bacon, then bake for 12-14 minutes or until set through.

6. Smoked Salmon Bagels
A classic brunch recipe, this bagel will be a big hit.
- 4 bagels, cut in half
- 4 tbsp. cream cheese
- 1 tbsp. capers, minced
- ½ lb. smoked salmon
Toast the bagels. Spread each half with cream cheese and top with smoked salmon. Sprinkle with capers and serve.
7. Banana Bread French Toast
French toast with a twist.
- 6 slices banana bread
- 2 eggs
- 1 tbsp. milk
Beat the eggs and milk together. Coat a slice of bread on both sides with the egg mixture and cook in a medium hot pan until the egg is set. Flip and cook the other side until done. Serve with syrup.
8. Tomato Tart
A premade crust speeds this dish up tremendously.
- 1 premade pie crust
- 1 lb. tomatoes, sliced
- 4 eggs
- 1 ¼ c. milk
Preheat the oven to 425°.
Mix all the filling ingredients together and pour into the pie crust. Bake for 20-25 minutes or until the filling is set.
9. Avocado Tostadas
Tostadas make a fresh, tasty brunch dish.
- 6 tostadas
- 1 avocado, mashed
- 2 tbsp. parsley, minced
- Dry cheese
Spread avocado on each tostada and top with a sprinkle of parsley and crumbled cheese.
10. Deviled Eggs
While traditionally picnic food, deviled eggs are great for brunch, too.
- 12 hard boiled eggs
- ¼ c. mayonnaise
- 1 tsp. mustard
- 2 tsp. paprika
Shell the eggs and cut them in half lengthwise. Scoop out the yolks and mash them in a bowl with the mayonnaise and mustard until smooth.
Spoon or pipe the yolk back into the eggs and sprinkle with paprika before serving.
