1. Quick summer shrimp
Heat ⅓ cup extra-virgin olive oil in a skillet on a high flame. Stir-fry 3 cloves of chopped garlic, red pepper flakes and paprika. Toss 2 pounds of jumbo shrimp in the dressing and add lemon juice. When the shrimp turns a bright pink after 2 minutes of cooking, turn the heat down and add basil, salt and pepper.
2. Easy-peel shrimp
Boil 2 pounds of peeled and deveined jumbo shrimp for 3 minutes. Transfer the shrimp to ice water to quickly cool them. Drain the water and add olive oil, salad dressing, pepper and garlic. Let the mixture stand for an hour. Spread aluminum foil on a baking sheet, sprinkle salt over it, and line the shrimp up on it. Broil in an oven for 10 minutes and serve.
3. Lemon shrimp
Put 20 peeled and deveined jumbo shrimp in a bowl and toss with cilantro and lemon zest from 6 lemons. Heat ¼ cup olive oil in a skillet and sprinkle with salt. Throw the shrimp in and cook for 5 minutes. Dress with olive oil, salt, pepper and lemon juice before serving.
4. Japanese garlic shrimp
Mix mayonnaise, soy sauce, garlic, minced onion, onion powder, turmeric, curry powder, cayenne, basil, turmeric, salt and pepper in a bowl. Thoroughly mix ½ cup of breadcrumbs in and leave in the refrigerator. Cut shrimp lengthwise and split open. Pack a little of the mixture in each shrimp and coat all over the outside, as well. Place shrimp in a skillet with sesame oil and cook at high heat with a lid on, for 5 minutes.
5. Sherry shrimp
Shrimp goes very well with alcohol. Place a saucepan over low heat and add butter, lemon juice, Worcestershire sauce, steak sauce and sherry. Add in a mixture of flour and water as a thickening agent, and refrigerate. Cook shrimp on high heat in butter and canola oil in a skillet. It should take the shrimp 5 minutes to cook properly. Dress the shrimp with the sherry sauce and serve.
6. Grilled rum shrimp
Make a dressing of spiced rum, honey, orange juice, lime juice, orange zest, ginger, black pepper, cornstarch, salt and cilantro. Dress the shrimp in this mixture and arrange them on a skewer. The shrimp should could well with 5 minutes on the grill.
7. Shrimp pasta salad
Toss a pound of shrimp in vinaigrette. Place the shrimp on skewers and grill for 5 minutes, basting with vinaigrette a couple of times. Add pineapple chunks to the skewers, as well. Serve, garnished with basil.
8. Coconut Shrimp
Mix 1 ½ cups of shredded coconut and ¾ cup of breadcrumbs in a bowl. Pick up 1 ½ pounds of peeled and deveined shrimp and toss with salt and pepper. Dip each shrimp in beaten egg whites, roll in the coconut mixture and deep-fry in oil.
9. Grilled peanut shrimp
This recipe takes some inspiration from Vietnamese cuisine. Whisk lime zest, fish sauce, lime juice and sugar in a bowl. Toss a pound of jumbo shrimp in this dressing and cook on a grill, giving 3 minutes to a side. Once the shrimp is off the grill, toss in a mixture of fish sauce, peanuts and cilantro, and serve.
10. Shrimp canapés
Boil 2 cups of water in a medium saucepan. Add a bay leaf, a cup of dry white wine and 2 teaspoons of salt. Once the water has simmered for 5 minutes, add a pound of peeled and deveined shrimp and cook for 1 minute. Strain the shrimp and slice them up into half-inch sections. Make dressing out of olive oil, crème fraîche and lemon juice, whisking vigorously until the ingredients emulsify. Add shrimp, chives and shallots to the mix. Chill in the refrigerator and serve on crackers.
