Record-breaking summer temperatures provide the perfect excuse to stay out of the kitchen. Soups, especially cold ones, make for a satisfying summer meal that will replace fluids lost through your sweat. The following meat-free soups are a mix of cold soups, fruit-based soups, and raw soups that will keep you cool all summer long.
1. Sweet Corn and Tomato Soup
Blend tomatoes, sweet corn, garlic, fresh dill, hot water, hemp seeds, walnuts, salt and pepper in your blender. Add half of a small avocado or some olive oil to add some creaminess to the soup. Blend the ingredients until smooth, pour into a bowl, and top with cubes of avocado and honey.
2. Chilled Broccoli Soup
This soup requires about 10 to15 minutes cooking on the stovetop before you puree the ingredients in your blender. Brown broccoli and onions (separately), in a stock pot, then cook them together in vegetable broth for 10 minutes or until the broccoli becomes tender. Transfer to your blender and puree with buttermilk, lemon juice, dill, olive oil, salt and pepper. Refrigerate and serve chilled.
3. Creamy Corn Soup
This soup cooks in less than 15 minutes, but your friends will think it’s been simmering all day long. Coconut and almond milk add creamy goodness, and spicy curry powder complements the sweetness of the corn. Cook the corn in the milk on your stovetop and add salt and pepper to taste. Puree the soup in your blender if you prefer a smooth and creamy soup.
4. Cold Cucumber Soup
This simple cold soup will cool you down on a hot day. Add a lot of fresh herbs to inject summery flavors and Greek yogurt for all-over creaminess. Combine chopped cucumber with plain Greek yogurt, lemon, shallot, garlic, dill, olive oil, parsley, and red onion in your blender and puree until smooth. Cool the soup overnight and season with salt and pepper before serving.
5. Green Herb Soup
Here’s another soup that has summer stamped all over it. It uses summer herbs like parsley, chives, thyme, and tarragon along with some sweet onions and butter. It cooks in less than five minutes on the stovetop – to sauté the onions. Take out your blender to puree the herbs with the onions and some single cream to add a final creamy touch.
You can’t say goodbye to summer until you’ve had some gazpacho. This summer classic makes use of juicy, ripe tomatoes, onions, celery, cucumbers, bell peppers, and a secret ingredient: strawberries. Strain the finished soup and raise a toast to summer.
7. Fruity Soup
Make a colorful, flavorful soup with your favorite fruits this summer. Sauté ginger until fragrant and add chopped strawberries, pineapples, mangoes, blueberries, lime peel, sugar, water and fresh citrus juices to the pot. Simmer for five minutes, cool and puree in your blender. Strain the soup and serve with a dollop of sour cream and grated orange rind.
8. Avocado Basil Soup
Avocado is a rich source of healthy fats, and the smooth creamy texture it creates is ideal for summertime soups. If you’re fond of guacamole, this soup provides a tasty alternative that requires very little prep time. Blend avocados, basil, cucumber, olive oil, salt and pepper in your blender until smooth. Let the soup chill for 30 minutes in the refrigerator and drink up.
9. Carrot Ginger Soup
The healthiest foods are usually the easiest to cook and carrot ginger soup is a prime example. If you have carrots, ginger, strips of orange zest, butter, vegetable stock, salt and pepper, you have all you need to make this deliciously healthy soup. Melt the butter in a soup pot and cook the onions and carrots until the onions get soft. Add the rest of ingredients and cook for 20 minutes. Remove the orange zest and blend the soup until smooth.
10. Strawberry Soup
Serve strawberry soup as an appetizer or with a salad for a light lunch. The only ingredients you’ll need are strawberries, mint leaves, yogurt, and milk. Garnish with toasted almonds.
