Making homemade pancakes is a delightfully easy task that can be done using ingredients you probably already have on hand, like all-purpose flour, baking powder, sugar, butter, and eggs.

Our basic recipe is a great starting point, but you can also try some of our variations that incorporate buttermilk or yogurt for added flavor.

– 1 cup all-purpose flour, spooned and leveled
– 2 tablespoons sugar
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 1 cup milk
– 2 tablespoons melted unsalted butter or vegetable oil

– Assorted toppings, such as butter, maple syrup, confectioners' sugar, honey, jams, preserves, sweetened whipped cream, or chocolate syrup

Preheat your oven to 200 degrees and have a baking sheet or heatproof platter ready to keep cooked pancakes warm in the oven.

In a small bowl, whisk together flour, sugar, baking powder, and salt, then set it aside.
In a medium bowl, whisk together milk, melted butter (or oil), and egg.

Add the dry ingredients to the milk mixture, and whisk until just moistened (be careful not to overmix, as a few small lumps are okay).

Heat a large skillet (nonstick or cast-iron) or griddle over medium heat.
Fold a sheet of paper towel in half, moisten it with oil, and carefully rub the skillet with the oiled paper towel.

For each pancake, spoon 2 to 3 tablespoons of batter onto the skillet, using the back of the spoon to spread the batter into a round shape (you should be able to fit 2 to 3 pancakes in a large skillet).

Flip the pancakes carefully with a thin spatula, and cook until they're browned on the underside, which should take another 1 to 2 minutes.

Transfer the cooked pancakes to the baking sheet or platter, cover them loosely with aluminum foil, and keep them warm in the oven.

Continue cooking the rest of the batter using more oil as needed, and you should end up with about 12 to 15 pancakes in total.
