– 2 pounds yellow squash, sliced – 1 onion, chopped – 2 cloves garlic, minced – 1/2 cup mayonnaise – 1/2 cup sour cream – 1/2 cup grated Parmesan cheese – 1/2 cup shredded cheddar cheese – 1/2 cup crushed Ritz crackers – 2 tablespoons butter – Salt and pepper to taste

Preheat oven to 350°F. In a large pot, boil sliced squash until tender. Drain and set aside.
In a skillet, sauté chopped onion and minced garlic until tender.
In a large mixing bowl, combine boiled squash, sautéed onion and garlic, mayonnaise, sour cream, Parmesan cheese, shredded cheddar cheese, and salt and pepper to taste.
