Ingredients:

  • 4 large egg yolks
  • 2 ounces bittersweet chocolate
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup sugar
  • 3/4 cup heavy cream
  • 1 pinch salt, optional

Directions:

In a double boiler, whisk 4 yolks, sugar, and, if you like, a pinch of salt for about 3 minutes, or until sugar has dissolved. Then, quickly whisk in cocoa powder and chopped chocolate until the mixture is thick and smooth. Let it cool down to room temperature.

Whip your heavy cream and whisk half of it into your chocolate mixture. Use your rubber spatula to fold in the remaining whipped cream. Place your chocolate mousse in the fridge for 2 hours or more. Before serving, you can garnish it with shaved white or/and dark chocolate.
