7. Zucchini stuffed with mozzarella cheese and tomatoes
Split zucchini lengthwise and hollow it out. Apply olive oil to a baking sheet and leave the zucchini on it. Mix tomatoes and vinegar in a bowl and stuff the zucchini with it.
Season with salt and pepper, and bake for 20 minutes. Top with mozzarella and broil for 2 minutes until it begins to bubble. Serve hot.
