  • Nonstick cooking spray
  • 1/2 yellow onion (large)
  • 8 oz. cremini mushrooms
  • 2 cloves garlic
  • 2 Tbsp. butter
  • 4 cups frozen riced cauliflower (thawed and drained)
  • 3 cups cooked chicken (diced or shredded)
  • 1 cup sour cream
  • 1 tsp. dried parsley (optional)
  • 1 tsp. garlic powder
  • 1/2 tsp. paprika
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1 cup shredded cheddar cheese (for chicken mixture)
  • 1 cup shredded cheddar cheese (for topping)

3.1 Preheat

Preheat the oven to 375°F.

3.2 Prep

Spray a 9×13-inch baking dish with nonstick cooking spray. Set aside.

Finely the chop onion. Slice the mushrooms. Mince the garlic.

3.3 Stove

Set a large pot over medium-high heat and add the butter. Once melted, add the onion and mushrooms. Saute until vegetables are browned and softened, 6-7 minutes. Add the minced garlic and continue cooking until fragrant, about 30 seconds. Add the riced cauliflower to the pot and cook, stirring constantly, for 1 minute longer.
