  • 9 Yukon gold potatoes (2 1/2 lb.)
  • 1/2 red onion
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 2 Tbsp. olive oil
  • 1/2 tsp. garlic powder
  • 1/2 tsp. paprika
  • 1/8 tsp. cayenne
  • 1 tsp. salt
  • Black pepper
  • Ketchup (for serving)

3. Directions:

3.1 Preheat

Preheat the oven to 425°F.

3.2 Prep

Line a large baking sheet with parchment paper.

Dice the potatoes into 1/2-3/4-inch pieces. Finely dice the red onion and bell peppers.

Arrange the potatoes and vegetables on the baking sheet. Drizzle with the olive oil, and sprinkle with the garlic powder, paprika, cayenne, salt, and black pepper. Stir with a rubber spatula to coat the potatoes evenly in oil.
