2. Ingredients for Sausage and Mushroom Egg Casserole

  • nonstick cooking spray
  • 8 oz. cremini mushrooms
  • 12 oz. breakfast sausage (removed from casing)
  • 1 Tbsp. butter (alternatively use leftover sausage oil)
  • 12 eggs
  • 1/2 cup whole milk
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 8 oz. (2 cups) shredded Havarti (or Fontina cheese)

3.1 Preheat

Preheat the oven to 350°F.

3.2 Prep

Spray a 9×13-inch baking dish with nonstick cooking spray.

Place two sheets of paper towels on a large plate, and set aside.

Thinly slice the mushrooms.

3.3 Stove

Set a large skillet over medium-high heat. Place the sausage in the skillet. Cook until browned, using a rubber spatula to break up the sausage into small pieces as it cooks, 5-7 minutes.

Transfer the sausage to the paper towel-lined plate to drain.

Add the butter to skillet (or use leftover oil from cooking sausage) and return to the heat. Once melted, add the mushrooms. Cook, stirring occasionally, until the mushrooms have shrunken and browned, 5-6 minutes.
