  • 4 boneless, skinless chicken breast pieces (4 oz. each)
  • 3 Tbsp. extra-virgin olive oil
  • 1 Tbsp. balsamic vinegar
  • 1/2 tsp. garlic powder
  • 1/2 tsp. dried parsley
  • 1/4 tsp. dried basil
  • 1/4 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 3 cup cherry tomatoes
  • 8 oz. fresh mozzarella (small balls such as ciliegine)
  • 1/4 cup fresh basil leaves
  • Freshly cracked black pepper

3.1 Preheat

Preheat the oven to 425°F.

3.2 Prep

Place the chicken breasts between two pieces of plastic wrap or parchment paper, and roll or pound them to 1/2-inch thickness.
