  • 2 eggs (beaten)
  • 2 Tbsp. butter (melted)
  • 1/2 cup fine cornmeal
  • 1/2 cup all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 4 cups frozen corn kernels (thawed and drained)
  • 1 large scallion (minced)
  • 1/2 cup shredded low-fat cheese (for casserole)
  • 3/4 cup shredded low-fat cheese (for topping, if desired)

3.1 Preheat

Preheat the oven to 350°F.

3.2 Prep

Spray a 9- or 10-inch square baking dish with nonstick cooking spray and set aside.
