4. Citrus Salmon with Caramelized Onions and Carrots
Citrus salmon is a perfect dish if you’re planning to entertain during the summer. It’s tasty and simple, so you won’t have to spend all day preparing for your guests. Line the slow cooker with butter and olive oil, add onions and carrots, and leave to cook for six hours or until the vegetables caramelize. Arrange the salmon on top the vegetables and add slices of lemon and oranges. Cover and cook for 1 to 2 hours until the fish flakes. Serve with mashed potatoes or rice pilaf.
