10. Shrimp canapés
Boil 2 cups of water in a medium saucepan. Add a bay leaf, a cup of dry white wine, and 2 teaspoons of salt. Once the water has simmered for 5 minutes, add a pound of peeled and deveined shrimp and cook for 1 minute. Strain the shrimp and slice them up into half-inch sections.
Make dressing out of olive oil, crème fraîche, and lemon juice, whisking vigorously until the ingredients emulsify. Add shrimp, chives, and shallots to the mix. Chill in the refrigerator and serve on crackers.
