2. Chilled Broccoli Soup

This soup requires about 10 to15 minutes cooking on the stovetop before you puree the ingredients in your blender. Brown broccoli and onions (separately), in a stock pot, then cook them together in vegetable broth for 10 minutes or until the broccoli becomes tender.

Transfer to your blender and puree with buttermilk, lemon juice, dill, olive oil, salt and pepper. Refrigerate and serve chilled.
