– 2 tablespoons olive oil
– 1 pound andouille sausage, sliced into rounds
– 1 pound boneless, skinless chicken thighs, cut into bite-size pieces
– 1 large onion, chopped
– 1 large green bell pepper, chopped
– 1/2 teaspoon cayenne pepper
– 2 cups long-grain white rice
– 1 pound large shrimp, peeled and deveined
– Salt and pepper, to taste
– Chopped parsley, for garnish

In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat.

Add the sausage and chicken and cook until browned, stirring occasionally, about 5-7 minutes. Remove from the pot and set aside.
