Cream of Carrot and Lemon Soup

1 lb carrots, peeled and chopped 1 large onion, chopped 2 garlic cloves, minced 2 cups vegetable broth 1 cup heavy cream 1/4 cup freshly squeezed lemon juice 2 tablespoons olive oil Salt and black pepper to taste Croutons, for serving

Ingredients:

In a large pot, heat the olive oil over medium heat. Add the onions and garlic and cook until they are translucent, stirring occasionally.

Add the chopped carrots to the pot, and cook for another 5 minutes until the carrots are slightly softened.

Add the vegetable broth to the pot, and bring it to a boil. Reduce the heat to low and let the soup simmer for 20-25 minutes or until the carrots are tender.
