– 200g digestive biscuits – 150g icing sugar – 250g chocolate mini eggs or leftover Easter eggs – 80g unsalted butter, melted

– 1 tsp vanilla bean paste – 400g full-fat soft cheese – 400g double cream – vegetable oil, for the tin

Ingredients:

Prepare a 20cm deep spring form cake tin by greasing it with oil and lining it with baking parchment.  Crush digestive biscuits in a food bag or food processor to form a fine crumb.

Mix melted butter with the biscuit crumbs and press it onto the base of the prepared tin. Chill for 30 minutes.

Chop half of the chocolate mini eggs and beat the soft cheese with icing sugar and vanilla until combined.

Beat double cream in a separate bowl until stiff peaks form.  Fold the whipped cream and chopped chocolate eggs into the cheese mixture.

Spread the cheesecake mixture over the biscuit base and smooth the surface with a spatula. Chill overnight.

The next day, carefully release the cheesecake from the tin and top it with the remaining whole chocolate mini eggs for decoration.
