– 6 cups chicken broth, or as needed – 1 pound portobello mushrooms, thinly sliced – 3 tablespoons olive oil, divided – 2 medium shallots, diced – 1 pound white mushrooms, thinly sliced

– ½ cup dry white wine – 1 ½ cups Arborio rice – 3 tablespoons finely chopped chives – 4 tablespoons butter – ⅓ cup freshly grated Parmesan cheese – sea salt and freshly ground black pepper to taste

Ingredients:

Heat the broth in a saucepan. In a separate saucepan, heat 2 tablespoons olive oil over medium heat.

Instructions:

Add portobello and porcini mushrooms; cook until soft, about 3-4 minutes. Transfer mushrooms and liquid to a bowl; set aside.

Add 1 tablespoon of olive oil to the pan. Add shallots and cook for 1 minute. Add the rice and stir until it is coated with oil and turns a pale golden color, about 2 minutes.
