One of my preferred turkey cooking methods is the high-heat roasting technique. The turkey comes out of the oven juicy and with crisp-skinned skin because there is little preparation required and little cooking time.

Start by removing and discarding the truss that connects the turkey legs. Trim any extra fat from the neck or body cavity and throw it away. Get rid of the neck and giblets or save them for stock.

Rinse the turkey thoroughly with warm water. Utilize paper towels to dry. A 13 x 16 x 3-inch heavy roasting pan made of stainless steel should have a V-shaped rack in it. (Never use a disposable aluminum pan or a dark roasting pan.)

Olive oil should be applied all over the turkey skin, and salt and pepper should be added. Place the bird on the rack with its breast up. To push the wing tips under the bird, first pull the wings away from the body and then tightly twist them.

Cover the ends of each drumstick with caps made out of aluminum foil. A digital leave-in meat thermometer should be inserted through the thickest part of the breast near the center until the tip touches the bone. Open a kitchen window and turn on your exhaust fan.

Place the turkey in the oven, and roast for 1 to 1-1/2 hours without basting, or until the internal temperature reaches 160°F. Rotate the pan in the oven halfway through the roasting period to ensure even cooking and browning. Pan should be taken out of the oven.

Make the gravy while the turkey is resting. Put the roasting pan over a stove burner. (Be careful handling the pan; it will have hot handles.) Remove any extra fat or solids that have gathered in the pan by skimming it.

Over medium heat, add the broth and simmer for a few minutes, scraping any browned bits from the bottom of the pan with a whisk or wooden spoon. Switch off the heat and leave the area.

Melt the butter in a medium saucepan over a low heat. Include the onions. Cook for about 15 minutes, or until very soft and translucent. Avoid browning. Put the flour in. Cook for two to three minutes while whisking occasionally.

Cognac and the turkey dripping-chicken broth mixture should be whisked in before cooking for about five minutes, uncovered, with occasional stirring, until thickened. Add the chopped herbs and cream, if using.
