In 2022, there was a popular soup called glow soup. It was loaded with "orange" veggies and spice; quite delicious, and super good for our skin. To go a step further, I like a little sustenance, and even more nutrients.

3 leeks, halved lengthwise, discard green portion, and chop white part into 1-inch pieces 8 medium carrots, peeled and chopped into 1-inch pieces 1 large orange bell pepper, stemmed, seeded, and chopped into 1-inches pieces

1 teaspoon ground turmeric blended with black pepper 1/2 teaspoon ground cayenne pepper 1/2 teaspoon ground cumin 5 cups vegetable broth 1-15 ounce can coconut milk 6 new potatoes, cleaned and quartered

2 cups fresh spinach leaves Place the cut white pieces of leeks into a bowl of water. Let soak to ensure all the grit falls out of the layers.

Heat a large saucepan over medium heat. Add leeks, carrots, and bell pepper. Sauté in a dry pan over medium heat for 4 to 5 minutes, stirring occasionally, until they begin to lightly brown.

Add turmeric blend, cayenne, and cumin. Stir in broth. Increase heat to high and bring mixture to a boil. Reduce to a simmer over medium-low heat and cook until carrots are tender, 12 to 15 minutes.

Using an emersion blender*, blend cooked vegetables and broth until smooth. Stir in coconut milk. Add potatoes and spinach. Continue cooking, over medium heat, for 12 to 15 minutes, until potatoes are tender. Serve warm.

Makes 4 to 5 servings. Note: Leeks will retain a bit of water, but the water will help to sauté the veggies. – If not using an emersion blender, simply use a regular blender, using caution with the hot liquid, then return the mixture to the pan and continue on.
