– 12 rice paper wrappers – 2 cups of cooked vermicelli noodles – 1 cup of sliced cucumber – 1 cup of sliced carrots – 1 cup of sliced red bell pepper

– 1 cup of fresh cilantro leaves – 1 cup of fresh mint leaves – 1 cup of fresh basil leaves – 1/2 cup of chopped roasted peanuts – 1/4 cup of soy sauce – 1/4 cup of hoisin sauce

– 2 tablespoons of honey – 2 tablespoons of freshly squeezed lime juice – 1 clove of garlic, minced – 1/2 teaspoon of grated ginger

Ingredients:

Wash and slice the cucumber, carrots, and red bell pepper into thin, long strips. Wash and dry the cilantro, mint, and basil leaves.

Instructions:

In a small bowl, whisk together the soy sauce, hoisin sauce, honey, lime juice, garlic, and grated ginger until well combined. Set aside.

Fill a large bowl with warm water. Dip one rice paper wrapper into the water and let it soak for about 10 seconds, or until it becomes soft and pliable.

Place the rice paper wrapper onto a clean work surface, and arrange a small amount of each filling ingredient in a row across the center of the wrapper, leaving about an inch of space on each side.

Instructions:

Fold the sides of the wrapper over the filling and then roll it tightly to form a cylinder. Repeat with the remaining rice paper wrappers and filling ingredients.

Arrange the fresh spring rolls on a platter and sprinkle the chopped roasted peanuts on top.  Serve the dipping sauce on the side and enjoy this healthy and delicious appetizer!
