For the salad: – 8 ounces halloumi cheese, sliced – 4 cups mixed salad greens – 1 cup cherry tomatoes, halved – 1 cucumber, sliced – 1 bell pepper, sliced – 1/4 red onion, thinly sliced – Fresh mint leaves or basil, torn (optional)

For the dressing: – 2 tablespoons lemon juice – 2 tablespoons extra virgin olive oil – 1 teaspoon honey or agave syrup (optional) – Salt and pepper to taste
Preheat a grill or stovetop grill pan over medium-high heat.
In a small bowl, whisk together the lemon juice, olive oil, honey or agave syrup (if using), salt, and pepper to make the dressing. Set aside.
Place the halloumi cheese slices on the preheated grill or grill pan. Cook for about 2-3 minutes per side, until golden brown grill marks appear. Remove from heat and let cool slightly.
