I love this recipe for glazed ham because it is the perfect combination of sweet, savory and salty. Serve it for Christmas or Easter — either way, it'll be a complete showstopper for your holiday table.
Holiday Glazed Spiral Ham
– 1 (6- to 8-pound) spiral-sliced, bone-in ham shank
– 1 cup pure maple syrup
– 1/2 cup dark molasses
– 2 tablespoons whole-grain mustard, such as Old Brooklyn Cheese Company's "Cleveland Caviar"
Preheat the oven to 300 F.
Place ham on a foil-lined sheet tray and cover tightly with foil. Warm in the oven until the internal temperature reaches 120 F, about 1½ hours.
In the meantime, combine maple syrup, dark molasses, mustard, apple cider, curry paste and garlic in a saucepan over medium-low heat and simmer until reduced by about 1/3, 6 to 8 minutes.
Remove the ham from the oven and discard the top layer of foil.
Raise the oven temperature to 400 F.
Brush on a thick layer of glaze, place the ham back in the oven and roast, uncovered, for 10 minutes.
After 10 minutes, brush with another layer of glaze and continue to cook, 5 to 10 minutes more, until the glaze darkens and gets sticky, and the ham is completely heated through.
Remove from the oven and brush with any remaining glaze before serving.
