In this article, we'll go over the steps to make roti canai at home.

How to Make Roti Canai

- 4 cups bread flour (520 g) - 3 tablespoon unsalted butter, melted - 1 egg , room temperature - 1 tablespoon sweetened condensed milk - 1 teaspoon salt  - 1 ¼ cup water (310 ml)

Ingredients:

Begin by adding flour, salt, egg, melted butter, condensed milk, and water to a standing mixer bowl.

Instructions:

Mix well until the ingredients are fully incorporated and knead the dough for 10 minutes. Let it rest for 10 minutes before kneading it again for another 5 minutes.

Instructions:

Divide the dough into 10 small balls, generously coat each ball with unsalted butter, and place them in a buttered container. Cover it tightly with cling film and refrigerate overnight.

Instructions:

The next day, spread unsalted butter on a working surface, take one ball, and flatten it lightly. Use the heel of your palm to press and stretch the dough as thin as possible.

Instructions:

Occasionally spread some softened unsalted butter to aid in stretching. Optionally, gently pull one edge of the dough to stretch it even more.

Instructions:

Next, scrape and push the upper and lower ends of the dough toward the middle, forming a thin log with wrinkles.

Instructions:

Roll the log into a circle, tucking one end inside, and leave it for 10 minutes before cooking. Repeat with the remaining balls.

Instructions:

When ready to cook, heat a pan with unsalted butter over medium heat. Flatten the rolled dough into a 10-15 cm diameter and place it on the pan. Cook for a few minutes, flip, and continue cooking for a few more minutes.

Instructions:

To achieve a fluffy roti canai, immediately and carefully grab the cooked dough with both hands and squeeze it towards the center.

Instructions:

Keep the roti canai warm under a kitchen cloth and serve with dhal curry or any curry of your choice and sambal.  Enjoy!
