Beef is not made equally. When it comes to taste, using a higher-grade, higher-quality steak will make all the difference. Although some steaks may be less expensive, it's crucial to buy your beef from a reliable supplier because you never know if the cow received hormone or antibiotic treatments.

HOW TO CHOOSE A TOMAHAWK

Tomahawks don't require a lot of preparation, like other steaks. Since the butcher should have taken care of the trimming for you, you shouldn't have to do much or any of it.

The proper seasoning of your steak is the next step. Prior to beginning to cook, be sure to allow enough time for the Tomahawk to properly season and come to room temperature from the fridge.

INGREDIENTS

1. Set your Traeger to 225 when you're ready to cook. Super Smoke mode should be activated if using a WiFIRE ®-compatible grill.

2. Liberally sprinkle kosher salt over the steak's surface on all sides. Give the steak an hour to come to room temperature. After an hour, completely rinse the steak to remove all salt, then pat it dry.

3. Generously season both sides of the meat with Holy Cow BBQ Rub. Apply the rub to the other side of the meat after flipping it.

4. Immediately place the meat onto the grilling grate. Don't turn it, spray it, or touch it. Just let it be. The steak should be cooked until it achieves an internal temperature of 120 F. Depending on the thickness, this should take about 45 minutes.

5. Remove the steak from the grill and let it rest for 10 minutes with a thin layer of aluminum foil over it.

6. Set a griddle or cast-iron skillet on the grill grate. Set your Traeger to 450 degrees Fahrenheit (or 500 degrees Fahren if using a WiFIRE ®-enabled grill). Allow it to become as warm as you can.

7. Set the meat on the cast iron once it is heated. Advice from Matt: Using a dry griddle is great, but you may use a high smoke point oil (like canola oil) or butter if you want.

8. For one minute, sear the meat. One minute later, flip it over and cook the other side. Your steak should reach an internal temperature of no more than 130 degrees F after doing this.

9. Remove the meat from the grill and generously spread butter over it. Due to carryover cooking while the butter melts on top of the steak, it will continue to cook another 5 to 7 degrees.

10. Give the steak 10 minutes to rest. Cut and savor!

Internally, strive for 120–130 °F for uncommon. Aim for an interior temperature of 130–135 °F for medium-rare. Internally, aim for 135–145 °F for medium. Aim for an interior temperature of 145–155 °F for medium-well. Aim for 155–165 °F for well-doneness.
