Here are easy appetizers you can make for your party. First, we have a vegan samosa that takes some time to make, but oh so good. Second, the hit of the party will be mini lobster rolls.

Ingredients 1 small onion, finely chopped 2 cloves garlic, crushed Small chunk ginger, grated Cooking oil spray

Vegan Samosa

3 tsp curry powder, mixed with 1 tsp mustard seeds ½ pound potatoes, peeled and diced small 3 oz. fine green beans, cut into ¾ cm lengths 2 oz. frozen peas 4 sheets filo pastry

Step 1 Fry the onion, garlic and ginger in a spray of oil for 3 minutes, then stir in the curry powder and mustard seeds. Add the potatoes and beans with 12 oz. water. Cook for 20 minutes until veg is soft and liquid evaporated. Add the peas for the last 5 minutes. Heat the oven to 350 degrees.

Step 2 Spray a sheet of filo pastry with oil, then cut into three strips. Put 2 tbsp of mix at the top of a strip and fold over itself into a triangle. Continue folding down the length of the pastry to make a samosa shape. Put on a non-stick baking tray. Repeat with rest of pastry and filling. Bake for 18-20 minutes until golden brown.

Ingredients 1, cracked and picked – or about 6 oz. lobster meat whole cooked lobster or lobster meat 4 ½ ounces light mayonnaise 2 tbsp lemon juice

A small bunch chive, snipped 1 large stick celery, finely diced A few pinches cayenne 1 tbsp butter, melted 10 mini rolls

Step 1 Mix the mayonnaise, lemon juice, most of the snipped chives, diced celery and three pinches of cayenne. Season with white pepper and a little salt, then gently fold through the lobster meat and keep chilled.

Step 2 Just before serving, cut a slit in the top of the rolls. Brush some of the butter on the insides, and gently warm in a low oven 300 degrees. Spoon the filling between the rolls. Add a pinch or two more cayenne and the rest of the chives.

Ingredients 4 chicken thigh fillets, skinless For dusting flour, heavily seasoned About 3.5 ounces milk Polenta Oil 4 hot dog rolls or soft white rolls Good-quality mango chutney Mayonnaise Some leaves watercress, not the stalky bits

Step 1 Dip the chicken in the flour, then the milk and finally the polenta. Heat some oil in a frying pan and fry the chicken on both sides until it is golden brown and crunchy. Make sure it is cooked through – turn the heat down and carry on cooking if you need to.

Step 2 Spread the rolls with the chutney and mayo, add some watercress leaves and then put a piece of chicken in each. If you are using hot dog rolls, cut the chicken in half first so that it fits.
