1 lb ground lamb or beef 1 large eggplant, sliced 2 large potatoes, sliced 2 cloves of garlic, minced 1 onion, finely chopped 2 tomatoes, diced 2 tablespoons olive oil 2 tablespoons butter

1 cup beef or chicken broth 1/2 cup red wine (optional) 2 tablespoons tomato paste 1 teaspoon cinnamon 1 teaspoon allspice Salt and pepper to taste

For the Béchamel Sauce: 3 cups milk 1/4 cup butter 1/4 cup flour 1/4 teaspoon nutmeg Salt and pepper to taste 1 cup grated cheese (optional)

Preheat the oven to 350F. Sprinkle the sliced eggplant with salt and allow to sit for 30 minutes. This helps to reduce bitterness.

In a pan, heat the olive oil and butter over medium heat. Add the onions and garlic and sauté until they are translucent.

Add the ground meat and cook until browned; use a potato masher or large whisk to break up meat as it cooks. If there is excessive rendered fat, drain off all but about 1/4 cup (60ml).

Add the tomatoes, tomato paste, broth, red wine (if using), cinnamon, allspice, salt and pepper to the pan. Bring to a boil, then reduce heat and simmer for 15 minutes.

In a separate pot, make the béchamel sauce by heating the milk until it is hot. In another pan, melt the butter and add the flour to make a roux.

Slowly add the hot milk, whisking constantly to avoid lumps. Add the nutmeg, salt and pepper.

In a baking dish, layer the eggplant, potatoes, and meat mixture. Pour the béchamel sauce over the top and sprinkle with grated cheese (if using).

Bake in the preheated oven for 50-60 minutes or until golden brown. Let the moussaka cool for 10-15 minutes before serving.
