– 8 slices of rye bread – 8 oz corned beef – 8 oz sauerkraut, drained – 8 slices Swiss cheese – 1/2 cup Thousand Island dressing – 4 tbsp unsalted butter, softened

Cook Time: 20 Min

Ingredients

Preheat a skillet or griddle over medium heat.

Step 1

Butter one side of each slice of bread and place them butter side down on a plate.

Step 2

Spread Thousand Island dressing on the unbuttered side of each slice of bread.

Step 3

Top 4 slices of bread with a slice of Swiss cheese, followed by 2 oz of corned beef and 2 oz of sauerkraut. 

Step 4

Add another slice of Swiss cheese and top with the remaining slices of bread, with the buttered side facing up.

Step 5

Grill the sandwiches in the skillet or griddle until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

Step 6

Slice in half and serve hot.
