Yoko's fave recipe for overripe bananas is grain-free banana granola. You'll need: – 1 cup of mashed ripe banana – 1/4 cup of maple syrup – 1 cup of chopped almond (soaked and rinsed) – 1/2 cup pumpkin seeds (soaked and rinsed)

– 1 cup walnuts (soaked and rinsed), 1 cup coconut chips – 1 tablespoon of cinnamon – 3 tablespoon of cacao powder – 3 tablespoon of cacao nibs

In a big bowl, mix all the ingredients till well incorporated. Spread the mixture on parchment paper evenly and dehydrate till completely dry. Alternatively, bake in preheated oven for 40–45 minutes, stirring every 15 minutes.

And Yoko's tip is: "by soaking nuts/seeds you are activating them with enzymes and releasing anti-nutrients. Simply soak the nuts and seeds in water overnight and rinse till the water is clear. It also helps the flavours to get soaked up."
