Fried Wonton Tofu Recipe


The next few days mark the beginning of the Vietnamese Tết celebrations. A tradition of Tết is that you  eat vegetarian (ăn chay) on the last day of the previous year and first day of Asian New Year, so I will be sharing several Vietnamese vegetarian dishes with you until the celebration commences.

I prepared a tofu dish that included a typical Vietnamese vegetable called trái su su in Vietnamese. It’s also known as chayote in English, christophine in Creole and French and it’s from the squash family. So as you can imagine, if not cooked over high heat (to allow as much liquid to evaporate as possible), the dish can become very watery and soggy. To balance the texture of the dish, I added crispiness by crumbling fried wonton wrappers.

2. Ingredients for Fried Wonton Tofu Recipe

  • 1 (12-ounce) package firm tofu
  • 6 tablespoons canola oil (or any neutral oil), as needed
  • 15 store-bought wonton wrappers
  • 1 teaspoon Kosher salt
  • 1 yellow onion, cut into small wedges
  • ½ teaspoon salt, to taste
  • ¼ teaspoon red chili powder
  • 1 tablespoon chili black bean sauce
  • 1 teaspoon granulated sugar, freshly grated (or light brown sugar)
  • 4 tablespoons low-sodium soy sauce
  • 1 chayote (or your favorite vegetable, see tips)
  • cup diced carrot, boiled until softened
  • ½ teaspoon black pepper, freshly ground
  • 2 tablespoons parsley or cilantro, chopped

3. Directions:

  1. Peel and stone the chayote and slice the flesh lengthwise into 8 pieces, then cut into matchstick-like pieces. Heat the vegetable oil in a small fryer. Place the wontons one at a time into the hot oil; cook up to 3 wontons per batch. Make sure the wonton wrappers don’t touch each other. Lower the heat to medium. Deep fry for 2 minutes per batch. They will start to pop and turn golden. Flip each piece using chopsticks or a spider skimmer and cook for about a minute more until golden on both sides. Transfer to a paper towel-lined plate and set them aside.  Cut the tofu lengthwise into ¾-inch slices, then cut crosswise into logs. Sprinkle with salt and red chili powder. Toss well. In a wok, transfer the canola oil from the small fryer. Pan-fry the pieces on all sides until golden. The tofu should have a nice fried outer crust and still be moist inside. Transfer the tofu onto paper towels. Allow to cool a little. 
  2. In a small bowl, combine the black bean sauce, soy sauce and sugar. Stir well. In the same wok, add the chayote pieces. Ensure that they’re lightly coated in oil (no need to use a lot). Cook until lightly golden on all sides. Sprinkle with salt. Drizzle with the black bean mixture. Toss well, sprinkle the carrots and yellow onions over the tofu and chayote. Toss one more time, cover with a lid, reduce the heat to low and cook for about 5 minutes until soft and tender. Check seasoning; add salt and black pepper. Turn off the heat. with your hands, crumble the reserved fried wontons and add to the vegetables. Mix well. Keep on the stove for about 5 minutes. Transfer to a serving platter. Garnish with parsley or cilantro. Serve with jasmine rice and drizzle a little vegetarian nước chấm dipping sauce over it. Bon appétit!
