During the week when I’m pretty tired after a day at work and all I want it a yummy but nutritious meal, I’ll whip up this turkey stirfry.
So, you will need:
- 3 Turkey breasts
- Wild rice
- Mixed veg (I’m using asparagus, mange-tout, mini corn, spring onions, chilli and Chinese leaf but grab whatever you have handy)
- Light soy sauce
- Dry sherry (or Sake, if you have some)
- Ground or fresh ginger
- Half an onion
Instructions:
- Firstly you need to chop your onion and turkey, and any veg which take longer to cook like the asparagus, and fry in a pan on a high heat with some oil – sesame or garlic oil are really nice in this recipe.
- Put on the rice to boil, run the hot tap to fill the pan or boil the kettle to speed things up.
- Chop all your other veg into little chunks and add to your frying pan, once the turkey has cooked through.
- Add a glug of light soy and another glug of the dry sherry. Mix well to cover the veg.
- Sprinkle some ginger to give it some heat. This will go nicely with the chilli.
- Once all the veg is hot and cooked, serve with your soft rice. Switch on an episode of Friends and enjoy! Simples 🙂
