Recipe For Raspberry Cheese Pinwheel Appetizers

They may seem like an odd couple, but I paired raspberry and blue cheese to create these great party appetizers. First, I made a raspberry salad, tossed with pickled red onions, crumbled Gorgonzola cheese and candied walnuts. To make them easier to serve, I wrapped the raspberries in lavash flat bread and rolled them into pinwheel appetizers.

I secured the appetizers with party picks, so they would look elegant passed around on trays. They are great appetizers for finger food buffet parties and take no time to assemble. Fruits don’t have to be used only in desserts!

2. Ingredients for Raspberry Cheese Pinwheel Appetizers

  • 4 sheets lavash flat bread, halved
  • 3 (5.6-ounce) packages fresh raspberries
  • 8 ounces crumbed Gorgonzola cheese, at room temperature
  • ½ small red onion, sliced
  • 2 tablespoons raspberry balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon sea salt (or regular salt)
  • ½ teaspoon white pepper, freshly ground
  • 3 tablespoons olive oil
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh mint, chopped
  • 3 tablespoons candied walnuts (optional), coarsely chopped

3. Directions:

  1. In a small bowl, combine the red onions with honey, vinegar and 2 tablespoons olive oil. Toss well and set aside for about 15 minutes.
  2. Coarsely chop the raspberries. Place them in a large mixing bowl. Add the pickled red onions and sprinkle crumbled Gorgonzola, mint and dill over the raspberries. Drizzle with the remaining olive oil. Season with salt and white pepper. Lightly toss without crushing the raspberries too much. Spread the raspberry cheese mixture on the lavash bread sheets, stopping 1 inch before the edge (the filling will spread to the edges once the pinwheel is rolled). Top with candied walnuts. Roll the bread sheets up into a tight wrap.
  3. Using a sharp knife, trim about ½ inch from each end of the wraps. Slice the logs into 5 pieces. Secure each pinwheel sandwich with a party pick.
  4. Transfer the pinwheel appetizers to a serving platter, spiral side up. Decorate with a few blue-cheese-stuffed raspberries as a reminder of the flavors from the filling.
  5. Serve at room temperature.
  6. Bon appétit!
