The only way I survive any event is with pen and paper. I have to plan packing lists and itineraries for trips, I have to have a list for Christmas shopping, and I definitely need a list for grocery shopping. Thanksgiving is no different. In fact, Thanksgiving with a house full of guests and three of my boys relegated to the toy room on cots takes extra planning! I have to figure out which brother & spouse gets which room, what blankets, towels, soaps, etc need to be where, whether I need to do all 290 loads of laundry today before the company arrives tomorrow, oh, and tomorrow is my son, the Musician’s birthday…what about that?!! So, yes, I need a plan.
Our Thanksgiving menu consists of the following:
Turkey, dressing, mashed potatoes, gravy, green bean casserole, rolls, corny casserole (to be made by sis-in-law #2), butternut squash, cranberry relish, apple pie, pumpkin pie, pecan pie, and probably raspberry cream pie (if we are having that, my mom will buy the ingredients and make it herself, as it is her brain child).
I have everything already bought and ready…in theory.I bought a 20 pound turkey this year for $8. I am using “pumpkin” (banana squash) from my freezer, I am using butternut from my garden and green beans I bottled in the summer. I will make homemade rolls today and freeze them unbaked. I always try to have at least 6 boxes of Stove Top on hand, so that is already, too. My sis-in-law is bringing the fixings for her corny casserole. My other brother is bringing potatoes (he lives in Idaho). I am making up a huge batch of pie crust mix (just needs water) and will put that in the fridge. I have a 20 pound box of apples in the garage I got at a local orchard and I keep nuts in the freezer all of the time. The real chore will be getting everything ready at the same time. I bought a warming buffet on clearance at Target a year ago, though, and this will be the perfect time to try it out. Hopefully, it will keep everything warm, I will get the table set and the football games will be at halftime when it is time to eat!

2. Ingredients for Pecan Pie
- 1 cup light corn syrup
- 1 cup sugar
- 3 eggs, beaten
- 1 tsp vanilla
- dash salt
- 1 cup chopped pecans
3. Directions:
- Melt the butter in the microwave.
- Let cool.
- In a separate bowl, add other ingredients in the order listed.
- Add cooled butter.
- Pour into unbaked 9 inch pie shell.
- Bake 425 degrees for 10 minutes, then lower temperature to 375 and bake 40-50 more minutes.
