These pork chops come together in 15 minutes. That is my kind of weeknight main dish. They are broiled, not baked, which I find locks in the juices. The combination of herbs and cayenne pepper gives them a great flavor. My whole family loves these.
I often cut my own chops out of a boneless loin. I like to choose my own thickness. Also, there is very little waste that way. Some of those “assorted” chop packages you find on sale at the grocery stores have some mighty scary looking pieces of meat under the pretty ones on top.
If I don’t have a loin in my freezer and they aren’t on sale, I opt for the meatiest pork chops I can find. If all of the packages at the grocery store are the same price, I will buy a small package of two or a long one of four instead of the family pack. That way I can see all of the chops and I know what I am buying. I also prefer those flatter packages because they fit into my freezer better than those big, bulky packs. If only the family packs are on sale, I will only buy them if I am out of pork and desperate for a meal of pork. Otherwise, I bide my time.

2. Ingredients for Broiled Pork Chops with Herbs
- 1½ pounds pork chops
- 2 Tbsp butter, melted
- ⅛ tsp ground pepper
- ⅛ tsp cayenne pepper
- 1 Tbsp honey
3. Directions:
- Combine butter and garlic powder; brush over pork.
- Combine seasoning; sprinkle over pork.
- Place in two greased 15 X 10 inch pans.
- Broil 4-6 inches from the heat for 5 minutes.
- Turn and broil 3 minutes longer.
- Brush with honey; broil for 1 minute or until meat juices run clear.
