  • nonstick cooking spray
  • 12 oz. bittersweet chocolate (finely chopped)
  • 1/2 cup unsalted butter (115g per 1/2 cup)
  • 6 large eggs
  • 3/4 cup granulated sugar (150g per 3/4 cup)
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • Powdered sugar (to serve)

3.1 Preheat

Preheat the oven to 325°F.

3.2 Prep

Spray a 9-inch spring form pan with nonstick cooking spray. Set aside.

3.3 Microwave

Place the chopped chocolate and butter in a large microwave-safe mixing bowl. Microwave on high in 30-second increments, stirring between each, until the chocolate is fully melted and smooth. Allow the mixture to cool at room temperature for 5 minutes.

3.4 Prep

Place the eggs, sugar, vanilla extract, and salt in a large mixing bowl. Beat with a mixer on high speed until the mixture is pale, foamy, and nearly doubled in volume, 3-4 minutes.
