St. Patrick’s Day Greenies (Green Brownies Recipe)

  

Is there a better ingredient than pandan paste to create a dessert symbolizing St. Patrick’s Day? This evening, I used it to make ”greenies”. Instead of the semi-sweet or dark chocolate brownies traditionally call for, I used white chocolate and flavored the gooey dessert with pecans and a generous amount of pandan, which creates a beautiful green color.

It’s a sweet treat that would make a leprechaun “green” with envy. Sorry, couldn’t resist.  Happy St. Paddy’s Day everyone!

2. Ingredients for St. Patrick’s Day Greenies (Green Brownies Recipe)

  • 2 eggs, at room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/3 cup all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 5-½ tablespoons unsalted butter, softened to room temperature
  • ½ cup white chocolate chips (about 3 to 3.5 ounces)
  • 1-½ tablespoons pandan paste, to taste
  • ½ cup pecans
  • 1-½ teaspoons powdered sugar (optional), for garnish

3. Directions:

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, beat the eggs for about 5-6 minutes. You’ll get a pale yellow foam and the texture of the egg yolk will be thicker. Add the sugar and vanilla extract. Mix well.
  3. Place a pot filled with hot water (at a gentle simmer), topped with a piece of cloth so the bowl does not move and place a stainless-steel bowl filled with white chocolate on top. Stir until melted. Turn off the heat and add the butter. Another option is to heat the chocolate for 30 seconds in the microwave. Watch the chocolate carefully; it could burn easily in the microwave! Add the butter to the melted chocolate. Stir well. Add the egg mixture, slowly add the dry ingredients (flour, baking powder and salt) in 3 batches and color the batter with pandan paste. Finally, add the pecans.
  4. Pour the ”greenie” batter into a (6-½” x 8-½”) non-stick rectangular mold. Bake for 5 minutes at 350°F; lower the temperature to 325°F and bake for another 35-40 minutes. The texture of the ”greenie” should be a little flaky on top and soft and gooey on the inside.
  5. Remove from the oven and allow to cool completely. Place in the refrigerator for about 1 hour.
  6. Cut into squares.
  7. Optional: Sprinkle the top with powdered sugar.
  8. Serve with a nice green cold drink or a green matcha tea latte.
