- Extra-virgin olive oil
- 1 large head cauliflower (2 1/2 to 3 lb.)
- 3 Tbsp. avocado oil (or extra-virgin olive oil)
- 2 Tbsp. nutritional yeast
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. smoked paprika
- 1/8 tsp. cayenne (or more to taste; optional)
- 1/3 cup hot sauce (use a vinegar-based sauce such as Frank’s Red Hot or Tabasco)
- 2 Tbsp. salted butter (melted)
- Blue cheese dressing (your favorite)
- Celery sticks
3. Directions:
3.1 Preheat
Preheat the oven to 450°F.
3.2 Prep
Lightly coat a baking sheet with oil. Set aside.
Separate the cauliflower into florets 1 1/2 to 2 inches wide, but include any smaller pieces too.
Combine the oil, nutritional yeast, and seasonings in a large bowl and stir until well combined. Add cauliflower and toss to coat evenly.
Arrange the cauliflower in a single layer on the prepared baking sheet.

Bake the cauliflower on middle rack of oven until well browned in spots and tender-crisp (check with a fork), about 15 minutes. While the cauliflower bakes, make the sauce.

Combine the hot sauce and melted butter in a large bowl. Set aside.
