- Nonstick cooking spray
- 1/2 cup canola oil
- 1/2 cup light brown sugar (packed)
- 1/3 cup granulated sugar
- 2 large eggs
- 1 cup pumpkin puree
- 1/4 cup milk
- 1/2 tsp. vanilla extract
- 1 3/4 cup all-purpose flour
- 1 Tbsp. pumpkin pie spice
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
Preheat the oven to 350°F.
Spray a 9×5-inch loaf pan with nonstick cooking spray. Set aside.
Place the canola oil, brown sugar, granulated sugar, eggs, pumpkin puree, milk, and vanilla in a large mixing bowl. Whisk vigorously until smooth and combined.
