- 4 oz. cauliflower (finely chopped, about 2 heaping cups)
- 1/2 cup plain bread crumbs
- 1 cup shredded cheese
- 1 egg
- 1 egg white
- 1/2 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- Ketchup (optional)
Preheat the oven to 400°F. Line a baking sheet with parchment paper. Set aside.
Place the chopped cauliflower in the bowl of a food processor or blender. Pulse multiple times, until the florets have the same texture as couscous. Transfer the cauliflower to a large mixing bowl.
Add the bread crumbs, cheese, egg, egg white, garlic powder, onion powder, salt, and black pepper to the bowl with the cauliflower. Mix with a rubber spatula until the ingredients are thoroughly combined and hold together when pinched.
Shape the mixture into 24 “tots,” using about a tablespoon of the mixture for each, and arrange them on the prepared baking sheet.
Bake the tots on middle rack of oven for 15 minutes.
Turn the tots over and continue baking until golden brown, 8-10 minutes.
Check to see that tots are done. Remove from oven or add time as needed.
Serve tots immediately, with ketchup, if desired.
