- 2 inches fresh ginger
- 4 scallions
- 1 cup cilantro leaves
- 1 garlic clove
- 1 lime (for zest and 1 Tbsp. juice)
- 2 tsp. fish sauce (Thai or Vietnamese)
- 1 tsp. sriracha hot sauce (for turkey)
- 1 lb. lean ground turkey (93% lean)
- 1/2 tsp. salt
- 2 tsp. vegetable oil
- 4 fresh Thai chilies (preferably red, also called birds eye; optional)
- 8 Boston lettuce leaves
- 1/4 cup mint leaves
- 1/4 cup cilantro leaves (for serving)
- Peanut sauce (store-bought)
- Sriracha hot sauce (for serving)
3. Directions:
3.1 Prep
Scrape peel from the ginger with a spoon, then finely grate ginger into a large bowl. Thinly slice the scallions, chop the cilantro, and mince the garlic. Add all to bowl. Zest and juice the lime and add to bowl with the fish sauce and sriracha. Add the ground turkey and salt.
