  • 2 inches fresh ginger
  • 4 scallions
  • 1 cup cilantro leaves
  • 1 garlic clove
  • 1 lime (for zest and 1 Tbsp. juice)
  • 2 tsp. fish sauce (Thai or Vietnamese)
  • 1 tsp. sriracha hot sauce (for turkey)
  • 1 lb. lean ground turkey (93% lean)
  • 1/2 tsp. salt
  • 2 tsp. vegetable oil
  • 4 fresh Thai chilies (preferably red, also called birds eye; optional)
  • 8 Boston lettuce leaves
  • 1/4 cup mint leaves
  • 1/4 cup cilantro leaves (for serving)
  • Peanut sauce (store-bought)
  • Sriracha hot sauce (for serving)

3.1 Prep
