3.1 Preheat

Preheat the oven to 400°F.

3.2 Prep

Remove the papery skin from exterior of the garlic heads. Slice the pointed tops from the heads, creating a flat edge that exposes the cloves.

Cut four square sheets of foil. Place a garlic head, cut side up, in the center of each sheet.

Drizzle garlic heads evenly with the olive oil, and sprinkle with the salt. Lay a sprig of thyme and a sprig of rosemary on each garlic head.

Wrap the foil tightly around each garlic head. Place the wrapped garlic on a baking sheet.

3.3 Oven

Roast the garlic on middle rack of oven until a toothpick easily pierces the cloves, 45-50 minutes.

3.4 Check

Check to see that garlic is done. Remove from oven or add time as needed.

3.5 Serve

Allow garlic to cool for at least 20 minutes. Once the foil is cool enough to handle, unwrap the heads. Serve whole, or squeeze the roasted cloves from their skins into a bowl.
