2. Ingredients for Paleo Honey-Spice Baby Back Ribs
- 1 1/2 cups chicken broth
- 4 lb. baby back ribs
- Salt
- Black pepper
- 1/3 cup honey
- 2 tsp. paprika
- 2 tsp. chili powder
- 1 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. coriander
- 1/2 tsp. dried thyme
- 1/4 tsp. cayenne pepper
3. Directions:
3.1 Preheat
Preheat the oven to 250°F.
3.2 Prep
Position a roasting rack inside a large roasting pan. Pour the chicken broth into the pan. Set aside.
Season the pork ribs liberally with salt and black pepper on both sides.
3.3 Microwave
Pour the honey into a small microwave-safe bowl. Microwave until it is thinned, but not liquefied or boiling, 15-20 seconds.
3.4 Prep
Add the paprika, chili powder, garlic powder, onion powder, coriander, thyme, and cayenne pepper to the honey and whisk to combine.
Brush about half of the spiced honey evenly onto both sides of the ribs.
Place the ribs meat side up on the roasting rack. Cover the pan entirely with a large sheet of aluminum foil. Crimp the foil tightly around the edges of the pan so that no steam can escape.
3.5 Oven
Roast the ribs on middle rack of oven until they reach an internal temperature of about 180°F and are very tender, 2 1/2-3 hours.
3.6 Prep
Remove the roasting pan from the oven. Very carefully remove the foil from the pan. Brush the remaining honey evenly over the top of the ribs.
3.7 Oven
Set the oven to broil. Broil the ribs on the top rack of oven until the honey starts to caramelize, 4-5 minutes. Keep a close eye on the ribs to ensure they do not burn.
3.8 Check
Check to see that ribs are done. Remove from oven or add time as needed.
3.9 Serve
Allow the ribs to cool for 3-4 minutes on the roasting rack, then transfer to a cutting board. With a sharp knife, cut the ribs into desired portions, and serve immediately.
