It’s possible these cookies are called “snaps” because they disappear in a snap. They certainly aren’t the crispy cookies that I associate with ginger snaps. These are chewy, spicy, wonderful cookies. My kids, who have been well trained to like molasses cookies adore them.
I like these cookies particularly because they do not call for four or five spices. They are simply made with cinnamon, a most common spice. They go together quickly (a snap, even), too. I love easy recipes and this one certainly is that.

2. Ingredients for Cinnamon Snaps
- 1 cup packed brown sugar
- 1 egg
- 1 tsp vanilla
- 2½ cups flour
- 2 tsp baking soda
- 1 Tbsp cinnamon
3. Directions:
- Cream sugar and butter.
- Add egg, vanilla and molasses.
- Combine dry ingredients and add.
- Spoon onto cookie sheets and flatten.
- Sprinkle with sugar.
- Bake 350 degrees for 9 minutes.
