2. Ingredients for Honey-Soy Marinated Cod
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 clove garlic (minced)
- 1/2-inch knob fresh ginger (peeled and grated)
- 1 lb. fresh cod fillets (3-4 fillets per pound)
- Nonstick cooking spray
3. Directions:
3.1 Prep
Whisk together the honey, soy sauce, garlic, and ginger in a medium mixing bowl. Place the cod fillets in the bowl and turn a few times to coat with marinade.
Cover the bowl with plastic wrap and transfer to the refrigerator for at least 30 minutes, and no longer than 8 hours.
3.2 Preheat
Preheat the oven to 375°F.
3.3 Prep
Spray a square baking dish with nonstick cooking spray.
Remove the bowl from the refrigerator. Transfer the fillets to the baking dish and pour marinade over top.
3.4 Oven
Bake the cod on middle rack of oven until fish is opaque in the center and just starts to flake with a fork, 10-20 minutes, depending on thickness of fillets.

Check to see that cod is done. Remove from oven or add time as needed.

Plate the cod and drizzle the thickened marinade over top. Serve immediately.
