  • 1 Tbsp. coconut oil (melted, for macaroons)
  • 1/4 cup erythritol low-calorie sweetener (for macaroons)
  • 2 large eggs
  • 1/4 cup almond flour
  • 1 tsp. vanilla extract (for macaroons)
  • 1/4 tsp. salt (preferably fine sea salt)
  • 1 1/2 cup unsweetened shredded coconut
  • 1/2 cup finely chopped pecans
