  • 2 Tbsp. butter (softened)
  • 4-5 Yukon gold potatoes (1 1/2 lb.)
  • 1/2 tsp. garlic powder
  • 1 tsp. salt
  • Black pepper (to taste)
  • 3/4 cup heavy cream
  • 1/3 cup (1 oz.) freshly grated Parmesan cheese
  • Leaves from 2 sprigs fresh thyme

3.1 Preheat

Preheat the oven to 375°F.

3.2 Prep

Grease a 12-cavity muffin pan liberally with the softened butter.

Slice the potatoes a scant 1/8 inch thick and place in a large mixing bowl. Sprinkle with the garlic powder, salt, and black pepper.
